The Principato winery was founded in the early 1900s in Dinami, in the hills of Vibo Valentia, by four brothers: Francesco, Antonino, Andrea, and Giuseppe. Over time, it became a point of reference in the area. Over the years, new lands were acquired in the hills of Tiriolo and Soveria Simeri, in the province of Catanzaro.

Oil made with passion

Covering approximately 110 hectares of cultivated land, 50 of which are olive groves, the company boasts an ancient olive oil mill and all cultivation follows the dictates of traditional agriculture, carried out with a passion for good things made with care, in keeping with the values ​​that distinguish us.

Tradition and Innovation

The olives are processed within 24 hours of being delivered to the mill to prevent oxidation and fermentation. The extracted oil is automatically stored in one of eight stainless steel barrels equipped with nitrogen injection, located in a dedicated room.

Since oil is a very delicate food, as it is extremely sensitive to light, heat and air which cause it to degrade more rapidly, nitrogen is essential for its preservation because it is used to inertize the "headspace" between the oil level and the end of the tank, that is, to recreate an always inert atmosphere and constant pressure inside the tank, where the absence of oxygen does not allow the development of oxidative reactions.

Our oil is born from a combination of tradition and innovation, from the richness of a land that offers variety and quality, crafted with expert expertise inherited from generations.
